Ginza Kokuu | Sushi Restaurant in Ginza, Tokyo
GINZA KOKUU
Concept
A small counter-only sushi bar
A one-minute walk from Ginza-itchome Station, just off the main street, the restaurant holds nothing but a counter cut from a single slab of hinoki cypress.
Seasonal fish arrives from across Japan, and only what is judged best that morning is served, as appetizers and nigiri. Because the menu follows the day's catch, no two days are alike.
The restaurant opened in April 2026. Guests come for business dinners, anniversaries and quiet meals with someone close.

One piece at a time
Appetizers and nigiri that follow the seasons, in a menu served only once.

Omakase
Appetizers and nigiri
The omakase moves between appetizers and nigiri.
A clear soup and a grilled dish sit between them, following the turn of the seasons.

Sushi Gallery
Shaped one piece at a time from what arrives that morning.
